Writes a friend from Mississippi:
I own and operate two restaurants. Today, the health inspector came through for our semi-annual inspection. It reminded me it was the seven year anniversary of our opening this week. We pay the county health department $100 at this time each year. I made a comment to him, that he was here to collect and he said “That’s right, we don’t provide this service for you for free.” I almost laughed out loud. Good thing he was there to stick a thermometer in a variety of products or I would probably just serve spoiled food to my guests to save costs instead of throwing anything out. After alI, I am just a greedy capitalist who wouldn’t care if my customers got sick if it weren’t for the health department.
